創業より、あさ開は、米・水・技に恵まれたこの地で豊かな自然に磨かれ、多くの人々に愛され育まれてきました。支えて頂いている皆様に感謝し、変わらず信頼して頂ける酒蔵でありたいと思っています。そのためには、高い技術を持つ造り手に対し、上質な酒を醸す環境と設備をいかに整えることができるかが大事であり、手造りで培ったノウハウ・技術と清浄な環境で安定的な品質を生み出すための設備、この両者の歯車ががっちりと噛み合うことで生まれる“変わらぬ味”こそ「あさ開」の酒です。あさ開を飲んで頂く皆様に笑顔をお届けするためにも、今後を見据えた環境整備、体制づくりに一層の力を入れて参ります。

Ever since its founding, Asabiraki has been honed by the rich nature of this land blessed with rice, water and technical skill, and has grown up with the love of many people. We are grateful for such support and renew our commitment to being a trustworthy sake brewery. To do so, it is important how we can provide our highly skilled brewers with the environment and equipment to brew fine quality sake. The know-how and technology cultivated through brewing sake by hand, and the equipment to produce stable quality in a clean environment—bonding these elements firmly together is what gives our sake that “unaltered taste” so particular of Asabiraki!
Looking ahead to the future, we will strive further to condition the environment and build a structure that will allow us to deliver smiles to all Asabiraki drinkers.
